From the HG he is putting one butterfly hook in while keeping the other leg hooked and keeping a tight overhook. He is really using the overhook to control his opponent's posture. This control allows him to get into position to use his butterfly hook to sweep his opponent over so he can get the top position.

Pay super close attention when Jeremy talks about how he is trapping his opponent's far side arm. He does a good job explaining what he is doing and why but it is kinda hard to see because the grip is happening under his opponent's body.
